I’m always trying to find quick and easy breakfasts for me to enjoy during the week, and fruit is always part of it, whether in a smoothie, overnight oats, or this delicious yogurt, I pack those nutrients in! What’s more is that this recipe isn’t only nourishing, but it’s adjustable to fit you.

Today, we’re using a delightful yogurt that I recently discovered by Forager Project. This is a dairy-free cashew milk yogurt that is a wonderful substitute for regular yogurt. Other options for you might be regular or Greek yogurt, and there are also plenty of dairy-free alternatives that use plant-based milks from coconuts, almonds, etc. Yogurt is a great ingredient for any breakfast because it has protein and probiotics.

First, we’ll add our banana… now, not everyone might love banana as much as I do, but this ingredient adds sweetness and a soft texture, so I highly recommend. We all know it’s a great source of potassium, but it also has fiber and vitamins B6 and C, among other health benefits. You can slice this with a knife, use a cool tool like in the picture, or just break it into pieces with your hands (often my choice method).

Next, we can add our blueberries. As with all berries, this is a great source of antioxidants, fiber, and they are great for keeping your heart healthy! If you prefer a different type of berry, or a mix, I encourage you to find whichever makes your taste buds do their happy dance.

Lastly, we will add one more element of texture – a crunch! Nuts are another nutritious food, great for magnesium, potassium, and heart-health. I’ve added sliced almonds, but you could also add a different kind of nut or something a little different, like granola or crunchy peanut butter.

RECIPE

  • ¾ cup cashew milk yogurt
  • 1 banana
  • ½ cup blueberries
  • 2 tbsp sliced almonds

DIRECTIONS

  1. Add yogurt to a medium-sized bowl
  2. Slice banana into pieces and add to bowl
  3. Wash blueberries and add to bowl
  4. Add almonds to bowl
  5. Mix and ENJOY!

  • Can substitute
    • Cashew milk yogurt for regular, Greek, or another plant-based yogurt
    • Blueberries for other berries or a mix of berries
    • Sliced almonds for other nuts or granola
