I know you’re probably wondering what avocado toast has to do with Mother’s Day, but honestly, it’s a tribute to my mother – a phenomenal cook – who loves it when I make one of the ingredients for her: poached eggs. Plus, who doesn’t love a nutritious breakfast in bed.

So, as my first food post, I felt it was only appropriate to make something that was a little sentimental but also versatile for all of you creative foodies. The whole point of the food section in this blog is to showcase how easy and fun it is to make a recipe your own.

Today, we’re making a sweet potato toast base for our goat cheese and avocado open sandwich to be topped with a wonderfully decadent poached egg.

Sweet potatoes are a very versatile and flavourful ingredient. For this recipe, we are going to slice the sweet potato into quarter inch pieces for our “toast.” Once toasted or baked, this can be topped with a nut butter and chocolate chips for a nice dessert or made into something more savory, like avocado toast!

The toppings are truly up to you, but in honour of my mother, this recipe includes poached eggs. Poached eggs are easily one of the more underrated and underutilized types of egg… I think people have a misconception that they are difficult to make. But! I’m here to tell you that they are genuinely easier than your ordinary fried egg (and you’re left with less of a mess to clean up).

First, you want to put a pot of water on the stove. A great hack at this point is to put the water in a kettle first because it warms faster. Then, transfer the water to the pot and keep the stove at medium heat because you don’t want to bring the water to a boil.

Next, to get the right egg shape, you want a fresh, straight-out-of-the-fridge egg, and it’s easiest to crack it into a small glass to later pour into hot water on the stove.

Now, comes the fun part! You want to take a fork and stir the water quickly to make a spiral. Once you have a strong spiral, carefully and quickly pour the egg from the glass into the middle of the spiral. The spiral helps keep the egg intact. After three minutes or so, you’ll have a perfectly poached egg! Easy!

Once your sweet potatoes are ready to come out of the oven, you can add your goat cheese, avocado, and egg, and enjoy!

RECIPE

  • 1 large sweet potato, sliced into ¼ inch pieces
  • Large eggs (amount up to you)
  • 1 avocado
  • 5 oz (142 g) goat cheese
  • 2 tbsp chopped chives, plus extra for garnish

Note: the above measurements are merely suggestions.

DIRECTIONS

  1. Make sweet potato toast
    1. If you have a toaster, you can toast the sweet potato slices a few times on high heat, adjusting the slice to get an even toast, or
    2. If you have an oven, you can heat to 450°F (230°C) for 10-15 minutes on one side, flip, and another 10-15 minutes on the other side
  2. While the sweet potato is cooking, poach your eggs (additional tips above)
  3. Mix goat cheese and chives in a small bowl
  4. Assemble – spread some goat cheese on your toast, add some avocado slices, top with an egg, and season with salt and pepper to your taste
