During my time at home, I’ve found that I’ve had a craving for berries every morning. However, I wanted to find different ways to prepare them. I’ve made smoothies, yogurt bowls, and one of my favourite ways was this crumble. It just hits the spot!

The first thing I did was take my berry medley from Trader Joe’s out of the freezer and microwave the quantity I needed for a minute or two. I love doing this with frozen berries because it releases delicious juices that can disperse and add flavour to all parts of your dish.

Then, I added my corn starch to the berries. Corn starch acts as a thickener, so it will help hold the berries together and avoid those delicious juices from leaving everything too soggy. I also added nutmeg, cinnamon, and ginger; alternatively, you could just use pumpkin pie spice. Finally, for the berry mixture, I added honey. You could also add lemon zest to add some brightness.

Next, I moved on to mix the crumble ingredients together. The sliced almonds add a delicious texture and crunch. You could also use other nuts or shredded coconuts, as alternatives.

Finally, mix half of the crumble mixture with the berries and put them at the bottom of your pan, and top that off with the rest of the crumble mixture. Bake it and enjoy warm!

RECIPE

Berry Mixture
  • 2 cups mixed berries
  • 1 tbs corn starch
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbs honey
Crumble Mixture
  • 1 cup almond flour
  • ½ cup sliced almonds
  • ½ cup coconut flour
  • 2 tbs coconut sugar
  • ¾ tsp baking powder
  • ¼ tsp salt
  • ⅓ cup coconut oil
  • 2 tbs almond milk

DIRECTIONS

  1. Preheat oven to 350°F (~180°C)
  2. Combine Berry Mixture ingredients
  3. In a separate bowl, combine Crumble Mixture ingredients
  4. Fold in half of the Crumble Mixture to the berries and add to the bottom of your loaf pan
  5. Evenly distribute the remainder of the Crumble Mixture on top
  6. Bake for 45 minutes
  7. Serve warm & Enjoy!

NOTES

Can substitute

  • Berries for other fruit, such as apples, pears, peaches, etc.
  • Spices for pumpkin spice
  • Honey for maple syrup or agave
  • Sliced almonds for other nut or shredded coconut

Can add

  • Lemon zest
  • Oatmeal
